Appearance and attractiveness are the important criteria for foods selection by consumers. Typically, the consumers assess the freshness of an egg by observing the appearance of the egg shell, the egg white and egg yolk.

 

A class of molecules known as carotenoids is found in the paprika fruits.

 

Traditionally, synthetic antioxidants such as ethoxyquin have been used to provide stability to the carotenoids. However, due to the recent health concerns over the use of ethoxyquin by regulatory bodies, there has been a trend in the industry to move towards natural antioxidants.
